USDA zone 5 has average annual minimum temperatures of minus 20 to minus 10 degrees F. Many bamboos are hardy to about 10 to 15 degrees, although others are cold hardy to around zero. I found listings for just 2 species that are hardy to minus 20: Fargesia murielae, a clumping type (6-8 feet tall) that needs shade, and Phyllostachys aureosulcata, a running bamboo that is 12-15 feet tall. You might also consider growing different bamboos in containers and move them indoors during the winter. Good luck!
