What kind of vegetables require the least maintenance?
What kind of vegetables will not need to be replanted from year to year?
What maintenance is necessary for the low-maintenance vegetables?

We are planting a garden at a middle school as a service project and were wondering what would be best to plant for their garden as well as plants that require low maintenance. THanks.

 All vegetables are considered annual plants so you'll need to replant every year. Some exceptions are asparagus and artichokes. For children, I'd plant beans, cucumbers, carrots and tomatoes. All will need to be watered regularly, but aside from that require very little maintenance. Why not ask the children which vegetables are their favorites and which ones they would like to take responsibility for? Once they've chosen their favorites, you might be surprised how much ownership they'll take of the garden. Plant veggies in the early spring for harvest in the fall.
