Generally you would plant around your last expected frost date. North Carolina has several distinct regions (eg Piedmont area is much cooler than the rest of the state) where the growing season varies -- so approximate date depends on roughly where in NC you will be gardening. Your local county extension there should be able to help you in learning about the local weather and best varieties to plant. In the meantime you can check the frost date averages at the following government web site.

You may also want to check the winter hardiness zone for your new location.

Enjoy your new home and garden!
