Drooping stems can mean too much or too little water, or lack of humidity. Try irrigating the entire plant with cool water early in the day (better than misting to increase humidity). Make sure the soil is moist but well draining and withhold fertilizer. Too much nitrogen can make plants grow too quickly and lack of support tissues to make them rigid will also make them look droopy.
Best wishes with your gardenia!
