My Japanese Maple tree got caught in the freeze and now it looks dead and except for a few leaves on the bottom the rest of the stems are bare. Should I cut the tree down or cut the stems off.

If you want to keep your Japanese maple, prune off all the obviously dead stems and branches. As it grows, it will produce a new central leader and will eventually grow as tall as it was before. If you don't want to wait that long, you could replace your tree with a healthy new one.

Best wishes with your maple!
