WHAT CAN I DO ABOUT MY HOLLYHOCKS? SOMETHING SEEMS TO BE EATING THE LEAVES BUT WHEN I CHECK, I DONT SEE ANY INSECTS THERE.

Based on your description, I think it might be slug damage. Slugs are nocturnal and leave behind a silvery trail. You can hand pick them in the evening and drop them into soapy water, or you can trap them in slug traps filled with stale beer, or you can use a slug bait made with iron phosphate (avoid the metaldehyde baits).
