In your cold winter region, you can leave carrots in the ground until December, harvesting just what you need and leaving the rest in the ground. Or, you can pull all the carrots, cut off the green tops, and store them in trays of damp sand in a basement or shed where temperatures remain between 32 and 40F. As long as they remain hydrated, they will keep for several months in cold storage.

Or, you can cook and freeze them, or can them.
