I live in Southern Louisiana and soon my summer flowers will be dieing off but I'd like to be able to keep up some color even during the winter. Are there plants out there that are hardy enough to last through a southern winter?

There are quite a few plants that are hardy enough to go through your winter. Wants a frost or freeze takes your warm season plants out go ahead and replace them with these cool season flowers: ornamental cabbage, ornamental kale, pansies, Viola, stock, or snapdragons. These are in relative order of hardiness.
