Any suggestions for a good ground cover that can tolerate maple tree roots and shade?

I will assume you are in the southern portion of the state. Good choices for you would be English Ivy, Periwinkle or Pachysandra for a low growing ground cover. Be aware, however, that maples are very shallow-rooted trees, and cultivating under them can damage their roots. If you end up spreading any topsoil under the tree, be sure not to add more than 1" of soil over the tree roots. Keep the young goundcovers well watered during their first few seasons. If you are in the northern portion of the state, zones 3/4, let me know and we'll come up with some hardier choices.
