How do I know when to harvest asparagus?

Asparagus roots should produce harvestable spears the second year after planting. (It takes a few years for the plants to become established and mature.) Spears are ready to cut when they are 5-8 inches long. Cut on a 45 degree angle to the soil to avoidharming the crowns of the plants. You can harvest for 4-6 weeks, until the spears that are produced stay thin or look spindly, indicating the roots are running out of energy. By their third season, the plants will produce more spears over a longer seasonand you should be able to harvest spears for 8-10 weeks.
