Why do my chives get woody and fiberous.

When chives send out flower stalks, the plant can become woody. It's best to renew the plants all summer long by snipping the leaves (for use in cooking) and by keeping the flowering stems cut back. You can allow them to flower, just be sure to snip off the flowering stalk before the flowers develop seeds and the stalks turn woody.
