|Lettuce seeds can be collected and saved. They are tiny so it will take some work: allow the plant to produce a seed stalk. After the plant blooms and the flower forms a miniature "dandelion head," gather the seeds. Separate the seeds from the chaff by rubbing them with your fingers. Store in a cool, dry place for planting next season. Same with bok choy.
