|Shrub roses are traditionally pruned in early spring, just as the leaf buds begin to swell on the stems. At that time prune everything down to about knee level. Then choose the most robust 3-5 canes and prune everything else completely off the plant. You can then reduce the length of the canes you saved, cutting each back to an outward facing bud, in the direction you want the new growth to take. All the new growth has the potential for producing flowers.
I don't think you'll be successful in rooting your fig tree branches at this time of year. If you want to take cuttings to make more fig trees, do it in spring so the cuttings will have all summer to produce roots which will enable them to survive the winter months.
