What is the best way to winterize peonies in my region (Upper South)?

There's not much you need to do to ensure success with your peonies. After frost kills the tops of the plants, cut them off at ground level. The roots will rest during the winter and send up new stems and foliage next spring. After removing the tops of the plants you can mulch over the soil with several inches of compost, straw or even pine boughs for winter protection. Just brush the mulch away in the spring.
