How far in advance of planting should potato eyes be cut?

Seed potatoes that are egg-sized or smaller can be planted whole; cut larger tubers into pieces. There should be two or three eyes, or buds, on each piece. After cutting, spread the pieces out in a well-ventilated, well-lit place and let them dry for a day or two. If the weather is very damp, you can sprinkle the pieces with sulfur dust to help keep them from rotting.
