How long does it take for watermelon seeds started indoors to sprout?

The large seeds should sprout in 5-10 days given soil temperatures of 70-80F. Start them a month before you set the transplants in the garden. They'll do best if you transplant them after the soil has warmed a bit (a couple of weeks after your last frost date).
