Is the Amaranthus tricolor edible? I would like to use it in a salad mix for color. Any recommendations for other edibles that would add color?

There is a variety called Vegetable Amaranth or "Calaloo" that is an edible green. This vegetable is very popular in Jamaica. It is available from Johnny's at ph. 207-437-4301 or, visit their website at www.johnnyseeds.com. They have otherbeautiful and colorful varieties of greens you may enjoy.
