I was wondering if there are certain elephant ears of the giant variety that are more clumping instead of running. I'm tired of pulling up

Calocasia tends to develop running roots; Alocasia tends to clump. Try planting one of these:
Alocasia macrorrhizos (Giant Upright Elephant Ear);
Alocasia macrorrhizos 'Shock Treatment'; or
Alocasia cucullata 'Yellow Tail' (Yellow-edge Hooded Elephant Ear).
