|Plant your "seed potatoes" with the eyes up--these will become the shoots. Large seed potatoes (larger than a hen's egg) can be cut into pieces. Just be sure each piece has at least 2 or 3 eyes. Leave cut pieces to dry overnight before planting.
I usually plant my potatoes in rows. I dig a trench about 6" deep, and place my seed potatoes every 12 to 15: in the trench. Cover with about 2" of soil. When the plants sprout and are about 6" tall, fill in the trench, covering the bottom part of the plant. You can keep hilling the plants until they begin to flower.
