Zingiber officinale is the true ginger that grows from rhizomes. Buy plump roots in the early spring and cut into 1-2 inch long sections with well-developed growth buds on each piece. Let the cut ends dry, then plant just underground in rich, moist soil. Barely water until until sprouts appear, indicating active root growth. Feed once a month during the summer. The rhizomes are dormant in the winter and may rot in cold, wet soils. Harvest the roots at any time, but allow them a few months to grow before harvesting. The stems of the plants will grow 2' to 4' feet tall, with narrow, glossy, bright green leaves up to 1' foot long.
