For those root vegetables that improve in flavor if left in the ground after the first frost, is there a limit to how much cold they can take? Are there some zones that are just too cold to try this, or don't the vegetables mind being frozen?

As long as the plants are heavily mulched AFTER the ground has frozen, they should be fine until the soil thaws in spring. The problem isn't with the freezing, it's with alternating freeze-thaw periods that cause rot. It's important to harvest them before the leaves start growing, because the quality and flavor deteriorate quickly after that. Enjoy!
