I would like to expand by planting beds. Is it better to remove the grass with a shovel or to put Round up on and kill the grass and then plant. What way is more successful.

I would dig out the grass, along with the roots. You can usually do this easily by using a flat bladed shovel and working it under the grass and roots, then plowing straight across the soil, rolling up the sod as you go. Then dig the soil up slightly to loosen it, rake out any grass roots and debri and then plant your new bed. Or, if the area is large, rent a rototiller. Till up the grass, rake it out, level the soil and plant your new flower garden. Enjoy!
