In an old neglected vegetable garden, trash trees are growing like weeds. How do I best remove them? Largest is 2

I wonder if they are suckers from a nearby tree? Tree roots can travel quite a distance and the roots can send up suckers. Since we don't know what these trees are attached to, the best way to deal with them is to dig and pull them out. If they have roots, so much the better because you will be rid of them when you pull them out. If they are attached to a large root they are suckers and you'll have to cut or pull them off. But, more will appear in the same area from the same root. You can either determine where that root is entering the veggie garden and sever it completely at that point, or move your garden elsewhere so you won't have to continually fight the suckers.
