My purchased pepper plants have 2-3 plants in one 3

I would unpot one of them to see if there are actually 2-3 plants in the pot, each with their own root systems or if there's only one plant with 3 stems. If they are actually separate plants you can separate them and replant; if the stems share a common root system, just leave them as they are and plant them all together.
