I think you are doing everything right with your Knock Out Roses. Pruning them down in the winter is fine. If you forget, early spring is next best. And you can prune errant branches out at anytime during the growing season. Any organic matter is fine so use whatever is most economical and easily available. Two to three inches is plenty. Most of all, enjoy your roses!
