Deer usually steer clear of native plants and go for the most expensive, succulent exotics. Among those they aren't especially attracted to, are Armeria (Thrift), Aster, Centaurea, Marguerite, Coreopsis, Freesia, Wallflower, Iris, Limonium, Lithodora, Bee Balm, Saxifrage, Candytuft and Penstemon.
