All of a sudden my healthy cherry tree has limp leaves, still limp after watering. Why would that occur?

Water stress can cause sudden wilting, but so can a disease called Verticillium. Without inspecting the tree, I can't offer a diagnosis, but I'd give the tree a chance to recover. Water deeply once a week and see if it develops healthy new leaves. I hope so!
