Getting the roots out of the ground will keep those weeds from returning but it might be difficult to work around your existing plants. If you are very careful you can use an herbicide such as Round Up or Brush B Gone to kill the weeds. These products will kill on contact so extra care is required when working around your other plants. Put a small amount in a small container and carry it with you. Then prune off the tops of the weeds or pachysandra and immediately paint the herbicide on the cut stem. It will work down to the roots of the plant and kill it. There may be many, many roots down there so repeat applications will be necessary but if you keep at it, you'll get control.
