| Artichokes can take two years to develop 'chokes, but it depends upon how old the plant was when you planted it - if it was a one year old plant, you will get chokes this year. If you started with a small plant, it can take two years. A single plant cannot be split. Wait until you see two stems emerging from the soil and then dig and divide the plant. You may see small artichokes this year. If so, you can harvest them or allow them to open into flowers. The insides of the flowers will be a beautiful purple. I cut them after they open and hang them upside down to dry. They make lovely dried flowers and will retain their color for years. When the plant is mature the artichokes will be baseball sized and you can harvest and eat them. Enjoy your artichokes! |
