|Three weeks after corn silks appear, start checking ears for peak ripeness. Pull back part of the husk and piece a kernel with your thumbnail. If "milk" spurts out, they're ready to eat. If not, replace the husk, wait a few days, and test again. The flavor of corn is best when it's freshly picked and eaten. If you have a lot of corn ready at one time, pick and refrigerate to slow the maturation process so the corn will remain tender and tasty.|
