Many types of tomato plants grow clusters of fruits and they will each develop into a ripe fruit. I'd just leave them alone. It is normal for tomato plants to lose their lower leaves. As the leaves age they turn yellow. You can simply pull them off the plant. Overwatering can cause yellowing leaves so be careful with watering. The soil should be throughly saturated and then the top inch of soil should be allowed to dry out before you water again. Unless your plant is in at least a 3-gallon container, it could be that your tomato plant needs a little more root room so you might consider transplanting it into a larger pot. You can do this without interrupting the flowering and fruiting process by filling a large container with moistened potting soil and setting the current pot into the soil to make a hole. Then carefully slide the tomato plant out of the pot and set it in the hole in the potting soil. Water well and your plant won't even know it has been moved. It will set more flowers and fruit as the summer progresses. Best wishes with your tomato plant.
