How do you know when to pick your beets and carrots out of the garden?

Seed packages usually indicate the days to harvest. If you didn't save the package or mark the probable harvest dates on your calendar, you'll need to pull a plant to check its progress. Both are edible at any stage. Beet roots are generally most tender after growing for 40 to 50 days. The best size is between 1-1/2 to 2 inches in diameter. As beets get larger, they tend to become more fibrous. Likewise with carrots. Just harvest a few to see what's happening underground. Enjoy your harvest!
