I have nice tomatoe plants but the skin is so tough. What am I doing wrong?

Thick skin on tomatoes is a function of variety as well as growing conditions. Drought stress is one way to get thick skins. I'd suggest mulching the soil beneath the tomatoes to help keep the soil moisture constant. You may need to grow several different tomato varieties until you find one with the flavor and the tender skins that suits you best.
