How do you know when a spaghetti squash is ripe? I have some that are yellow and some that are golden, but both appear not quite ripe.

Harvesting your spaghetti squash should begin when it has reached its buttery yellow or deep orange coloring. The vine tendril opposite the fruit will be brown and shriveled. Another sign of maturity is when the skin hardens. You should be able to push you thumbnail into the skin without breaking it. You can harvest sooner if you want to eat the squash now but if you want to store it over the winter months, it should be completely mature. If you plan to store your squash, carefully cut the squash from its vines, leaving two inches of stem attached if possible.
