Escallonia is generally disease free so I wonder if the leaves are either sunburned or are showing stress from over watering. Do you water daily because the soil dries out each day (which is possible with containers) or do you water daily out of habit? If soil is kept too moist the roots can suffocate because excessive water drives out oxygen and roots need oxygen as well as moisture. Try testing the soil before you automatically water. Just stick your finger into the soil. If it is still moist one inch beneath the surface, you won't need to water. If it feels dry, go ahead and water. The safest way to acidify soil in containers is to topdress with peatmoss. As the peat decomposes it will help acidify the soil. Good luck with your escallonia!
