Amaranth gangeticus, or Elephant Head Amaranth, is an annual plant which grows 3-5 ft. tall. The plant evokes images of elephants' trunks reaching to the sky. It grows in full sun and completes its life cycle in 70-80 days. It freely self-sows or you can collect the seeds and replant them each spring.
