I'm looking for a ground cover to plant between concrete patio squares under a maple tree. Is there a ground cover to plant from seed that will stay a couple of inches tall?

I've used a few low-growing herbs for this purpose: two good choices would bese "Mother of Thyme" and "Lemon Carpet Thyme". Both are very low growing, have flowers, and not only tolerate foot traffic - they emit a delightful smell when brushed over with the foot. You can obtain both in plant form, and Mother of Thyme (also called wild thyme) in seeds, from Richter's Herbs at the web site or ph# 905-640-6677. The plants need at least some sun, so if it is very shady they may not thrive.
