My basil plants are going to seed on all stalks. If I want to keep basil for cooking should I remove the seeds?

You should always cut off the flowering stalks as soon as you recognize they are growing. Once your basil plants set seeds, the plants will die. You can collect the seeds, though and sow them in your garden and you'll get lots of healthy new basil plants. Be sure to pinch them back regularly and be sure to pinch out the flowering stalks whenever they appear.
