| Unfortunately, it sounds as though it may be "bolting" or trying to set seed. Usually cauliflower is ready early in the season, some as soon as 60 days after an early planting, depending on the variety. To tell if it is ready, generally the head will be about 6 inches across, and the "curds" are still compact and have not separated at all. Warm weather during the last week or so before harvest can accelerate development greatly, and some varieties are more heat tolerant than others, so you do need to keep a careful eye on it during the last two weeks or so before the maturity listed on the packet or label. |
