Collards will grow in cool weather and will take 70 - 80 days to mature. You can harvest some of the leaves a little sooner than that, but this late in the season, you may not get a large harvest. You might try planting leaf lettuces which can be harvested in 30-45 days, spinach, bush beans and radishes. These all mature in less than 6 weeks. Good luck with your fall garden!
