I have about 6 green pepper plants that are producing lots of peppers but they are small. Should I pick some of the smaller ones so the others will get bigger? Or just let them all grow and not expect them to be to big?

It's true that the fewer the fruit the larger the size. If the peppers are of edible size, go ahead and cut some of them from the plants. Leave the others - they may get larger. If they begin to change color, harvest them right away rather than allow them to mature the seeds inside which will change the flavor of the peppers. Enjoy!
