I moved my collards from my deck to the back yard. now the tips of the leaves have changed to a purple-ish color....why?

There are only two explanations for the color change - cold weather can turn the leaves a reddish color, as can a nutrient deficiency. If your nighttime temperatures have been cold, that's the reason. If not, you should feed your plants. In either event, the reddish tinged leaves are perfectly safe to eat. Enjoy!
