Elephant ears grow from huge tubers and the plants are quite frost sensitive. So, wait until frost kills the leaves down. Cut them off and dig the tuber for storage, or take then entire pot into a place that remains between 45 and 50 degrees all winter long. The tuber will rest until the temperatures rise and then it will resprout. Or you can unpot the tuber, place it in a paper bag and set it in a box or other airy place to store at 45-50F until spring. Enjoy your beautiful plant!
