Endless Summer hydrangeas flower on new growth of the season so don't be concerned about pruning yours back. The more you prune, the more potential for new growth and new flowers. It may be that yours are getting too much fertilizer. Excessive nitrogen can result in lots of lush, green growth, but sometimes at the expense of flowers. Next spring forego the fertilizer and cut your hydrangea back to promote new growth. I think you'll find that makes a difference.
