I bought Your Delicata Squash I have fruit that is 6 inches long and light yellow. How do I know when to harvest them?

Delicata is a winter squash that will take all summer to mature. Generally it's best to wait until the vines begin to wither before harvesting the squash. If you harvest too soon the squash will be watery and tasteless. Wait until the first frost, and then harvest the squash by cutting it from the vine. The frost will help change some of the starch to sugar, making the squash much sweeter. Be sure to leave a 3-inch stem when cutting from the vine. Allow the squash to dry in the sun until their stems shrivel. Then wipe excess dirt off and store them in a cool, airy location.
