You said to use a gravel dish and see that the water is one inch up on the dish. Am I understanding correctly?

Well, it's close! Use a metal or plastic tray, fill with gravel, set the pots on top of the gravel (so the water in the tray won't get into the pots) and then keep a half inch or so of water in the tray. As it evaporates it will increase humidity around the plant.
