The leaves on my rubber plant are falling off and I'm left with a bare stalk. Can it be cut back to produce more leaves?

Your rubbertree plant should develop new leaves all on its own. There is a potential for a new leaf to grow from a latent leaf bud just above the leaf scar where a leaf fell off. I'd continue to give the plant regular watering and some time. I think you will find that it will grow new leaves eventually.
