Not much you can do to encourage ripening. Tomatoes need warm weather in order to ripen. It's getting late enough in the season that you might consider ripening them indoors. You can pull up the plants and hang them upside down in a garage, picking the tomatoes as they turn red, or you can individually cut the tomatoes from the vine, wrap each in newspaper and set them in a box out in a garage or shed. Take a few indoors when you need them. They should ripen in about 10 days at about 75F. Good luck with your tomatoes!
