when and if I should prune them, or do they die down doe the winter?

Don't prune them now. Pruning encourages new growth which will be susceptible to winter damage. Hardy hibiscus can freeze all the way down to ground level and they will develop new stems and leaves in the spring. Wait until next spring to do any pruning. You can cut off any winter damage at that time. Best wishes with your new hibiscus.
