I am wondering how well an autumn blaze maple can tolerate pruning? I know they are supposed to reach a 50' x 40' height and width, but could I keep one pruned to a 30' height and 15' width?

You can keep your maple smaller than it's potential mature size by pruning annually. Don't wait until it gets too large for the site. Instead, prune in the fall or the spring, shortening the branches, removing some that clutter the canopy, and those that are crossing or rubbing. Annual pruning should keep your maple tree within bounds. Best wishes with your landscape.
